World’s Best Lemon Pie

Ingredients: For the Crust: – 1 1/4 cups all-purpose flour – 1/2 cup unsalted butter, cold and cubed – 1/4 cup granulated sugar – 1/4 teaspoon salt – 2-3 tablespoons ice water

For the Lemon Filling: – 1 cup granulated sugar – 3 tablespoons cornstarch – 1/4 teaspoon salt – 1 cup water

– 4 large egg yolks, lightly beaten – 1 tablespoon lemon zest (from about 2 lemons) – 1/2 cup fresh lemon juice (about 3-4 lemons) – 2 tablespoons unsalted butterct

Instructions: 1. Preheat the Oven: – Preheat your oven to 350°F (175°C).

Make the Crust: – In a food processor, combine the flour, sugar, and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.

– Add ice water, one tablespoon at a time, and pulse until the dough comes together. – Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Roll out the dough on a floured surface and transfer it to a 9-inch pie dish. Trim any excess dough and crimp the edges.

Blind Bake the Crust: – Line the crust with parchment paper and fill it with pie weights or dried beans. – Bake for about 15 minutes, then remove the weights and parchment paper. Bake for an additional 10 minutes or until the crust is golden brown. Allow it to cool.

Make the Lemon Filling: – In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water, whisking until smooth. – Cook over medium heat, stirring constantly until the mixture thickens.

– Remove from heat. Gradually whisk about 1/2 cup of the hot mixture into the beaten egg yolks, then return it to the saucepan. – Cook for an additional 2 minutes, stirring constantly.

Bake the Pie: – Bake the pie in the preheated oven for about 15-20 minutes or until the meringue is golden brown.
